Chicken and Wild Rice Soup

This Easy Chicken & Wild Rice Soup is a weeknight win — made with Rice-A-Roni, rotisserie chicken, and a can of cream of chicken soup for that rich, comforting flavor the whole family will love.
Ingredients:
1 box Rice-A-Roni Long Grain & Wild Rice (with seasoning)
1 tablespoon butter or olive oil
1 cup carrots, diced
1 cup celery, diced
1 small onion, chopped
2 cups cooked chicken, shredded or diced
4 cups chicken broth
1 can (10.5 oz) cream of chicken soup
Salt & pepper, to taste
Optional: milk or half & half to thin it out if needed
Instructions:
- In a large pot, melt butter. Add carrots, celery, and onion. Sauté for about 5–7 minutes, until softened.
- Pour in chicken broth. Add the Rice-A-Roni rice + seasoning packet. Bring to a boil, then reduce heat and simmer (covered) for 15–20 minutes, until rice is tender.
- Stir in the cooked chicken and cream of chicken soup. Mix well until the soup is fully incorporated.
- Heat for another 5–10 minutes on low — don’t let it boil.
- Taste and season with salt and pepper. If it’s too thick, add a splash of milk or broth.
Bonus Tip: Want it extra hearty? Add a handful of frozen corn or spinach at the end for a veggie boost!
